Mioroshi is a knife that borrows heavily from the design of the Deba for filleting fish, but with an elongated blade that also makes it a quality choice for slicing sashimi and other work requiring some extra finesse.
The blade is made of high carbon steel for strength and resistance which allows the edge to stay sharper for longer after each sharpening. The handle is carved from poplar wood grown in the Sapporo region of Northern Japan for a comfortable and firm grip.
